Gluten Free Pancakes (French Crepe style)

These pancakes are the perfect texture to fill up, roll up and devour!  There is no sugar in the mixture so they can be enjoyed with both sweet or savoury fillings.  We are a family of 5 so I double up and this serves as our traditional Sunday pancake breakfast.  The almond flour keeps energy levels stable throughout the day, these are also perfect for healthy lunchbox fillings. 

We serve our pancakes hot with a squeeze of fresh lemon and a sprinkle of coconut sugar mixed with cinnamon which the kids have nicknamed sugarmin!

Top tips:

  • Use 2 non stick frying pans and keep the production line moving in double the time by cooking 2 pancakes at a time!  
  • Keep the pancakes warm by stacking the cooked pancakes between 2 dinner plates until you are ready to serve.
